Vegan Pancakes




We have recently learned our son has some food allergies. Milk and eggs are on this list. (My contractor--we are getting new windows--calls him "little guy.") This morning I made up a vegan pancake recipe and everyone loved it. The girls didn't even notice a difference. When you think about pancakes, think of everything in two's:

2 cups of flour (I usually use whole wheat but we were out)
2 cups of soy milk
2 teaspoons of vanilla (secret ninja ingredient)
2 teaspoons of baking soda
2 teaspoons of salt


I usually would also add two eggs. My friend whose family are vegetarian/vegans once told me that you could just omit the eggs from pancake batter and they will be fine. This went over well; the sunflower seed butter and drinking soy milk is a work in progress. Anyone have good suggestions for taking your household peanut, milk, egg, and pea free?
