Macaroni, Cheese and Cauliflower I

Since it was Adelyn's Birthday the other day, we let her choose what she wanted for dinner. Her pick was hot dogs and macaroni and cheese. Here is the recipe that I like to use. 

1 16 oz bag of frozen cauliflower cooked and pureed in the food processor
1 16 oz bag of penne or other whole wheat pasta of your choice (I used fusilli)
1 10 oz block of cheddar cheese, shredded
2 tablespoons of butter
2 tablespoons of flour
2 cups of milk

Cook pasta and drain in colander  While pasta is in colander, add butter to pot and melt. Add flour and stir until it forms a roux. Slowly add milk while whisking. Once sauce thickens, add cheese and whisk until melted. Add pureed cauliflower and pasta back to pot and stir until combined.
