Loaded Baked Potato Salad

We had a family birthday dinner the other night for my father-in-law and husband. Their birthdays are just one day apart. We made grilled Red Snapper, which I highly recommend if you have never had it. We bought ours at Whole Foods! We also made a salad and raw veggies for the kids. For the starch we decided to get a little crazy. We hate mayonnaise. Hate it with a passion. So I thought this would be a great alternative to the traditional mayonnaise based potato salad. It was a big hit! So I made it again tonight. 

Loaded Baked Potato Salad
6 potatoes, peel and chop
1 cup of low-fat sour cream
4 pieces of bacon
1 cup of cheddar cheese

This recipe is so simple! Boil potatoes and chill. Cook bacon (I microwaved mine) and then crumble it. Put potatoes, sour cream, bacon, and cheese in a bowl and stir until combined. Add salt and pepper to taste.
