Kale, Onion and Quinoa Quiche

 What can I eat for lunch? I swear I ask that question every day! Can I have another yogurt with granola when I just had that for breakfast? What if I don't feel like having a sandwich?

My parents are currently between homes; sold one and the other one isn't ready for a few weeks. Since I have other grown ups to think about I decided I should try to make a lunch that wasn't cereal or grilled cheese! I came up with a quiche-esqe lunch which is both healthy (maybe minus the cheese) and tasty! 

Kale, Onion and Quinoa Quiche
16 oz. egg whites OR eight eggs
Medium onion chopped and browned
1 cup kale, frozen OR fresh
1t dried cilantro
1/2 t sea salt
1/2 cup quinoa, UNCOOKED
cheddar cheese

1. Mix all of the ingredients besides the cheese in an 8x8 greased pan.
2. Gently shake the mixture so the quinoa starts settling to the bottom.
3. Bake for 40 minutes at 350ºF.
4. Sprinkle the cheddar cheese on top of the quiche and bake for another five minutes.
