Balsamic Quinoa

My friend, Sharon, came over for dinner with her kids. Jared was making steak with grilled eggplant and I was in charge of the side dish. I really wanted to do something quinoa and was going to make Quinoa With Black Beans but realized that I didn't have all the ingredients. I decided to improvise!

Here is the recipe I came up with. Jared, my biggest food critic, loved it! Hope you will too!


Balsamic Quinoa 
1 onion
1T Wegmans Basting Oil (or oil of your choice)
3/4 cup uncooked quinoa
1t dried cilantro
1 1/4 cups of vegetable broth
1/4 cup balsamic vinegar
1 cup of frozen corn
2 cans of black beans

1. Brown the onion with the oil in a pot. 
2. When browned add the quinoa, dried cilantro, vegetable broth and vinegar. Bring to a boil and reduce the heat to a simmer. Cover and simmer for 20 minutes.
3. After 20 minutes add the corn, stir and cook for another five minutes.
4. Mix the quinoa with the black beans and serve!
