Flourless Almond Loaf

There is a strong chance you've noticed I like things to be easy. Easy meals, electronic vacuums and mops and so on. I also like to cook and bake and when those things are easy I'm one happy lady! Add in the healthy factor and that's it, I'm in my version of heaven!

Packed with protein, can be dessert OR breakfast and naturally sweetened, this does not stay in my house very long as the whole family loves it. It's not super sweet but just enough to be approved by Jared and he happily eats it fresh from the oven! Just try it...

Flourless Almond Loaf
5x7 pan (mine is Pyrex)
1 1/2 cups raw almonds ground finely/almond meal *
1/4 cup maple syrup
1/2 t cinnamon
3 eggs
1 t vanilla

*I got my almond meal from Trader Joes, it had the best bang for your buck! You should also be able to find it in the natural section of your grocery store or you could grind your own.

FYI: This makes a small loaf so if you're feeding a lot of people I would double it and adjust the cooking time. 


Directions:
1. Preheat your oven to 375F
2. Grease a 5x7 pan
3. Pour all of your ingredients into a medium sized bowl and mix until combined
4. Pour into the greased pan
5. Bake for 30 minutes, until golden brown

PS I'm down to 5 projects left on my to do list...I'm almost there! I'm just avoiding the ones like "clean out garage" and "organize attic" until Jared is home!
