Mozzarella Apricot Rollup

My friend Stacie came over around lunchtime. I had nothing in the house to feed the kids for lunch but, never fear, Stacie was here! She came up with this:

Mozzarella Apricot Roll Up

Ingredients:
Flatout Flat Bread
Shredded Mozzarella
Apricot Jam (would work with any kind!)

Microwave:
Place the flat bread on a microwave safe plate and sprinkle mozzarella evenly. Microwave until the cheese is just melted, about 30 seconds, or until the cheese melts. Spread the jam over the cheese and roll it up. Slice and serve!

Oven:
Place the flat bread on a cookie sheet and sprinkle the mozzarella evenly. Bake at 350 until the cheese is just melted, about 7 minutes, or until the cheese melts. Spread the jam over the cheese and roll it up. Slice and serve!

The kids LOVED it and so did we!
